Fewer things make me happier than not wasting food, especially foods as nutritious as radish greens! Full of vitamin C, B6, and A, magnesium, phosphorus, iron, calcium, potassium, and folic acid, WOWZA! GIMME! Let the items you have at hand dictate what you make, not the other way around and you'll end up with a lot more than you thought.

Radish Greens Pesto
Tips - carrot or turnip greens work really well too! Parmesan cheese can be used in place of miso, but if you don't have either it will still be wonderful.
Ingredients
Radish greens, 4 cups loosely packed
Cilantro, a handful, stems & all
Green onions, a handful, white & green part
Pepitas, toasted hard, start w/ half a cup
Miso, 1tbsp, optional
Lemon, juice to taste
Lemon zest, 1 unit
Olive oil, to taste, go slow you don't need much
Garlic, to taste
Salt, to taste
Instructions
Blend in a food processor until smooth but still chunky. If you use a blender it will still work but the end result will be more sauce-like, you can also chop everything by hand but it will labor intensive but it works!
